Duties and responsibilities related to the Senior Sous Chef role
Lead the day-to-day operation of the kitchen, ensuring the highest standards of food quality, presentation, consistency, and service are maintained at all times.
Oversee and supervise the preparation, cooking, and service of food across all kitchen sections, ensuring compliance with recipes, specifications, and company standards.
Review daily menus, event orders, bookings, and business forecasts to ensure effective production planning and resource allocation.
Monitor food quality through regular tasting, presentation checks, and service supervision, taking corrective action where required.
Ensure all dishes are prepared and presented to the highest standards before being served to guests.
Support the development and implementation of new menus, seasonal dishes, and promotions in line with the NYnLON brand and guest expectations.
Lead, motivate, and develop the kitchen brigade through coaching, mentoring, training, and performance management.
Foster a positive and collaborative team culture, promoting high levels of engagement, professionalism, and accountability.
Manage stock control, ordering, inventory management, and food cost targets, ensuring minimal waste and maximum efficiency.
Ensure full compliance with food safety, allergen management, health and safety, and HACCP requirements.
Take responsibility for kitchen administration, including rota planning, labour management, and operational reporting where required.
Act as the senior point of contact within the kitchen, ensuring smooth and efficient operations during all service periods.
