Summary As a Commis Chef - Japanese Peruvian Kitchen, you will support the culinary team in delivering exceptional dining experiences through the preparation and presentation of innovative Nikkei cuisine that blends the precision of Japanese cooking with the vibrant flavors of Peru. Working alongside experienced chefs, you will assist in daily kitchen operations, maintain the highest standards of food quality and hygiene, and contribute to creating memorable guest experiences while developing your culinary skills within Hyatt's dynamic and collaborative environment. Key Responsibilities Deliver the Hyatt brand promise and provide exceptional guest service to both external and internal customers at all times. Prepare, cook, and present Japanese Peruvian (Nikkei) food items according to Hyatt standards, established recipes, and presentation guidelines. Maintain thorough knowledge of all menu items, ingredients, preparation methods, and culinary techniques related to Japanese Peruvian cuisine. Support daily kitchen operations by preparing and ensuring efficient workflow within the assigned section. Accommodate special guest requests whenever possible while maintaining quality and operational standards. Ensure consistency in food quality, taste, portioning, and presentation. Follow food safety, hygiene, sanitation, and HACCP standards in all food handling and preparation activities, particularly when handling fresh seafood and specialty ingredients. Minimize food waste and contribute to achieving departmental food cost objectives. Stay informed about seasonal ingredients, new products available in the market, and emerging trends in Japanese and Peruvian cuisine. Maintain assigned workstations, kitchen equipment, and storage areas in a clean, organized, and sanitary condition. Handle equipment and supplies with care to minimize damage and wastage. Ensure all Hyatt brand standards, operational procedures, Touches of Hyatt, and Food & Beverage initiatives are implemented consistently. Work collaboratively with colleagues and other departments in the spirit of "We work through Teams." Build and maintain positive working relationships across all areas of the hotel. Support operational requirements and assist in other sections or departments when required to meet business and guest service needs. Previous experience in a similar role within a Japanese, Peruvian, Nikkei, Asian, or hospitality environment is an advantage. Basic knowledge of Japanese and Peruvian food preparation techniques and kitchen operations. Understanding of food safety, hygiene, and sanitation standards. Ability to work effectively in a fast-paced environment. Strong teamwork and communication skills. Flexible to work various shifts, including weekends and holidays. Diploma or certification in Culinary Arts, Hospitality, or a related field preferred. Previous experience in a similar role within a Japanese, Peruvian, Nikkei, Asian, or hospitality environment is an advantage. Basic knowledge of Japanese and Peruvian food preparation techniques and kitchen operations. Understanding of food safety, hygiene, and sanitation standards. Ability to work effectively in a fast-paced environment. Strong teamwork and communication skills. Flexible to work various shifts, including weekends and holidays.
