Job Purpose The Commis I supports the daily operation of the assigned kitchen section by preparing and cooking high-quality food in accordance with established recipes, presentation standards and food safety requirements. The position assists senior chefs in maintaining an efficient, clean and well-organised kitchen while consistently delivering an exceptional guest experience. Key Responsibilities Food Preparation and Production Prepare, cook and present food according to approved recipes, portion sizes and presentation standards. Complete daily mise en place and ensure all ingredients are prepared before service. Assist the Chef de Partie and senior chefs with the operation of the assigned kitchen section. Ensure food is served promptly, consistently and at the correct temperature. Check the quality, freshness and condition of ingredients before use. Minimise food waste by following proper preparation, portioning and storage procedures. Inform the supervisor immediately of any shortages, quality concerns or operational issues. Support other kitchen sections when required. Hygiene, Safety and Sanitation Follow all food hygiene, sanitation and workplace safety standards. Maintain a clean, organised and safe working area throughout the shift. Store, label, date and rotate food items according to FIFO requirements. Ensure kitchen equipment and utensils are cleaned and handled correctly. Report damaged equipment, maintenance concerns, accidents or safety hazards immediately. Comply with HACCP requirements and all hotel food safety procedures.
